Banana Cherry Whole-Wheat Muffins

My latest weekend baking project inspiration came from another of my favorite food bloggers, Tart To Heart’s Carly Sullivan.  She features delicious and often healthy recipes on her blog, you should check her out here!  Her original recipe was Streusel topped Banana Berry Muffins, I adapted the recipe to fit what I had in my pantry.  If your know me then you know my affinity for whole wheat flour, I love the taste and texture and I just feel healthy eating it.  These muffins are moist and loaded with flavor, top that with a crunchy topping and there is no better way to spend a weekend morning…you know except for adding a cup of coffee, then it is perfection :)

Banana Cherry Whole-Wheat Muffins (adapted from Tart To Heart’s Streusel Topped Banana Berry Muffins)

  • 2 cups whole wheat flour
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • pinch of salt
  • 1 cup mashed ripe banana (2-3 average size bananas)
  • 1/2 cup buttermilk
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 2 eggs
  • 2 Tbsp vegetable oil
  • 1 cup fresh cherries, pitted and quartered

Topping

  • 3/4 cup oatmeal
  • 1/3 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 cup chopped pecans
  • pinch of salt
  • 3 Tbsp unsalted butter, melted

Preheat oven to 400 degrees F.  Line muffin tin with paper liners. In a large mixing bowl combine the flour, brown sugar, baking powder, salt.  In a smaller bowl or large mixing cup mix mashed bananas, buttermilk, milk, eggs, vanilla and oil.  Combine the wet and dry ingredients and stir until combined.  Fold in the cherries.  In a small bowl combine all topping ingredients.  Fill muffin cups 2/3 full (seriously here guys, you don’t want your topping to fall off!) and top with about a teaspoon of topping mixture.  Bake 20 minutes, or until cooked through.  Let cool and enjoy!

This recipe yielded 12 muffins for me and I had some left over, not enough to fill a tray so I gook out the jumbo muffin pan and made two of them.  Perfect for the ride to church on Sunday!

      Thanks! They are delicious, but plan to eat them pretty fast, the ripe bananas made them really moist and they probably won’t keep long. But I guess you could always freeze any extras. Enjoy!
