Eggnog Pancakes
I know this is a little late but…
Here is a fun way to use up that last bit of left over eggnog from the holidays. No matter which holidays you celebrate, I hope that you partake in a little eggnog and that you enjoy these breakfast beauties!
Also, these are great when paired with an eggnog latte…just sayin!
Eggnog Pancakes
- 1 1/2 cups flour
- 1 tbsp sugar
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup eggnog
- 2 tbsp butter (melted)
- 1 egg, slightly beaten
- Milk
- Syrup
- Nutmeg
- extra butter for topping
Heat a lightly oiled skillet or griddle over medium heat. In a bowl, mix flour, sugar, baking powder and salt. Make a well in the center; pour in eggnog butter and egg. Mix until dry ingredients are moist. Batter may be very thick, add milk until it reaches the desired consistency. Pour 1/4 cup batter onto the griddle for each pancake (this make a pretty big pancake). Cook pancakes until they are bubbly on top. Flip with spatula and continue cooking until lightly browned on the bottom. Top with syrup, butter and nutmeg…enjoy!
