Pumpkin Pie Oatmeal

I’m so happy it is Fall.  Yeah the weather is cooler and the holidays are coming but what I am really interested in is all of the ways I can incorporate pumpkin into my food! The weekend is my only real time to make interesting breakfasts, so this week I was inspired by cooler weather and made some Pumpkin Pie Oatmeal.  So delicious and Fall-y, try it out when it gets cold in your area.  It should put you in the mood for fire places, changing leaves and sweaters 🙂

Pumpkin Pie Oatmeal

  • 1 cup oatmeal
  • 3/4 milk
  • 2 1/2 Tbsp brown sugar
  • 1/4 tsp allspice*
  • 1/8 tsp nutmeg*
  • 1/4 tsp cinnamon*
  • 1/8 tsp ginger*
  • 1/8 tsp salt
  • 1/2 tsp vanilla extract
  • 2 Tbsp butter
  • 3/4 cup pumpkin puree
  • 1/2 cup toasted pecans for topping (optional)
  • * You could substitute 1 tsp of pumpkin pie spice for the spices with a (*) next to them
In a saucepan combine oatmeal, allspice, nutmeg, cinnamon, ginger, salt and butter.  Cook oatmeal mixture, after bring it to a boil, on medium-low for about 10 minutes.  Stir in brown sugar, vanilla and pumpkin.  Cook til heated through and oats are at desired consistency.  Serve warm and topped with toasted pecans (with a side of coffee).
