Pumpkin Oat Muffins
It is still fall and that means that I am still obsessed with pumpkin. Sorry guys, only a few more weeks until everything is peppermint and eggnog 🙂 This weekend I made these Pumpkin Spice Chocolate Oat Muffins from Family Fresh Cooking. They are easy to make and look great, personally I would have liked them to be a little sweeter so next time I’m adding more sugar. I couldn’t get enough of the topping though and I adore that they are whole wheat.
Always a fan of a nutty muffin or bread, I added half a cup of chopped walnuts to the batter and 1/4 cup to the topping. I love a little extra crunch. Also, I went ahead and followed the suggestion of using (dark) chocolate chips in the batter instead of sprinkles, just because I love chocolate…but stuck to the sprinkles in the topping.
